Making and maturing
The wines are made using traditional methods. The reds are in concrete
lined vats for three weeks and is circulated each morning and evening
for about 1 hour. The wine is stored for 10 months and then bottled unfiltered.
The whites are in stainless steel vats and the fermentation is
controlled at 18c. The Croix du Mont grapes are harvested by hand and selected
over four pickings. Temperatur is controlled at 21 degrees during fermentation
and is halted by chilling
Wines and dishes:
The reds of Chateau Vertheuil Montaunoir enjoy the company of unsophisticated dishes
such as rib steak à la Bordelaise, a rabit stew with wild thyme,
a tart of pink mushrooms or a fruity comté cheese. For the whites,
the most suitable is a Bethmale or a goat's cheese, and with cooked seafood
and shellfish they are outstanding.The Croix du Mont is ideal as an aperitif
by itself with fois gras. It also goes well with strong cheese and white meats
.
